บทคัดย่อ

งานวิจัยนี้มีวัตถุประสงค์เพื่อต่อยอดสินค้าเกษตรในชุมชนเชียงใหม่สู่อาหารปลอดภัยภายใต้ ประชาคมเศรษฐกิจอาเซียน การศึกษาทางด้านสังคมบริบทเกี่ยวกับแนวคิดการพัฒนาผลิตภัณฑ์อาหารแปร รูปโดยใช้ปรัชญาเศรษฐกิจพอเพียงในการประยุกต์อาหารปลอดภัยของไทย จากกลุ่มผู้ผลิตสินค้าเกษตรแปร รูปในเครือข่ายกิจวิจัยเพื่อพัฒนาท้องถิ่น การวิเคราะห์ผลการด าเนินการผลิตและระดับศักยภาพในการพัฒนา สู่มาตรฐานอาหารปลอดภัย การคัดเลือกกลุ่มต้นแบบมาเป็นกรณีศึกษาการปรับเทคโนโลยีการผลิตอาหารให้ ได้มาตรฐานอาหารปลอดภัยและพัฒนาสูตรส่วนผสมให้สอดคล้องกับแนวโน้มการบริโภคอาหารสุขภาพใน อาเซียน การเปรียบเทียบคุณภาพของผลิตภัณฑ์ที่พัฒนากับของอาเซียนในด้านคุณค่าโภชนาการและราคา ต้นทุน ใช้สถิติพื้นฐานร้อยละและการเปรียบเทียบค่าเฉลี่ยในเชิงปริมาณ ผลการศึกษาพบว่า กลุ่มต้นแบบ ผู้ผลิตอาหารแปรรูปปลอดภัยคือ วิสาหกิจชุมชนสันกอเก็ต มีแนวคิดในการใช้ปรัชญาเศรษฐกิจพอเพียงมา ยกระดับการผลิตอาหารให้ปลอดภัยโดยใช้หลัก 3 ห่วง 2 เงื่อนไข คือ การผลิตวัตถุดิบอาหารให้พอเพียงกับ ศักยภาพการผลิตที่ปลอดภัย การมีเหตุผลต่อการคัดเลือกวัตถุดิบที่มีต่อคุณภาพผลิตภัณฑ์สุดท้าย การสร้าง ภูมิคุ้มกันมุ่งสู่มาตรฐานความปลอดภัยตาม ASEAN GMP การใช้องค์ความรู้ด้านวิทยาศาสตร์ควบคุมการทอด ข้าวแตนและข้าวพองให้มีคุณภาพปลอดภัยเพื่อให้เป็นวัตถุดิบต่อยอดในการผลิตข้าวแตนบาร์ที่ใช้ส่วนผสม เป็นผลไม้จากเครือข่ายวิสาหกิจชุมชน ผลิตภัณฑ์แปรรูปมีจุดเด่นกว่าผลิตภัณฑ์ธัญพืชอัดแท่งในอาเซียนคือใช้ ข้าวพองกรอบของไทย มีรสหวานตามธรรมชาติของผลไม้อบแห้งเมืองร้อน เช่น มะม่วง ล าไย กล้วย มี พลังงานต่ า มีไขมันทั้งหมดต่ า และไม่มีไขมันอื่นตัว จึงเหมาะส าหรับเป็นอาหารเพื่อสุขภาพ โดยสูตรพัฒนามี คะแนนเฉลี่ยทางประสาทสัมผัสในระดับชอบปานกลางแตกต่างทางสถิติเมื่อเปรียบเทียบกับสูตรต้นแบบที่มี คะแนนเฉลี่ยทางประสาทสัมผัสในระดับเฉยๆ (p0.05)

Abstract

The research aimed at the food safety development of agricultural products in Chiang Mai communities under the ASEAN economic community. The social study on the contexts of Thailand food safety and food product development based on an application of The Sufficiency Economy Philosophy. The study was carried out on agricultural communities having a research network with The Office of Knowledge for Research and Development. The context was focused on the manufacturing results and the potential development to food safety standard. The selection of the master community as a case study to ensure food safety implementation and develop food formulation in accordance with the trends of healthy consumption in ASEAN. Comparison of the development community product with ASEAN products in the aspects of nutritional values and cost. Fundamental statistics such as percentage and a compassion of average values was employed on the quantitative results. The study indicated that the ค community enterprise of “San Kao Ket” has induced the Sufficiency Economy Philosophy to enhance the safe processed food using three pillars and two conditions. The moderation of raw materials production was to food sufficiency with a high potential and safety. The reasonableness for the selection of raw materials was aware in order to control the final product quality. The self-immunity was aimed at the safety standard towards ASEAN GMP. Scientific knowledge of the safety frying process of puffed rice was controlled prior mixing the rice with dried fruits obtained from community enterprise network to formulate the crispy rice bar. The developed bar was more features than the other similar products in ASEAN in terms of the crispy texture of Thai puffed rice, a natural sweet taste of dried tropical fruits, e.g. mango, longan and banana. The product was low energy, low fat, no saturated fat, therefore, was an ideal food for health diet. The developed bar was the average sensory medium-like statistical difference when compared to the original formula with a passive average score (p0.05).
