บทคัดย่อ

การวิจัยมีวัตถุประสงค์เพื่อศึกษารูปแบบการมีส่วนร่วมของผู้สูงอายุในการผลิตข้าวอินทรีย์เพื่อการบริโภคในครัวเรือน และเพื่อส่งเสริมอาชีพของผู้สูงอายุในการผลิตข้าวอินทรีย์หรือการแปรรูป การวิจัยใช้วิธีการศึกษาแบบผสมผสาน ระหว่างการวิจัยเชิงคุณภาพที่เก็บรวบรวมข้อมูลจากการสัมภาษณ์  เชิงลึก การสนทนากลุ่ม และเอกสารที่เกี่ยวข้อง การวิเคราะห์ข้อมูลใช้การวิเคราะห์เนื้อหา ขณะที่การวิจัยเชิงปริมาณใช้แบบสอบถามกลุ่มตัวอย่างเป็นผู้สูงอายุในบ้านห้วยปูลิง ตำบลห้วยปูลิงอำเภอเมืองจังหวัดแม่ฮ่องสอน และบ้านห้วยเฮี๊ยะ ตำบลปางมะผ้า จังหวัดแม่ฮ่องสอนจำนวน 388 ราย การวิเคราะห์ข้อมูลใช้วิธีการสถิติเชิงพรรณนา พบว่าคุณลักษณะทางประชากรของกลุ่มตัวอย่างผู้สูงอายุส่วนใหญ่ คือ ผู้ที่อายุ 60- 64 ปีขึ้นไปที่ยังมีกำลังและความสามารถในการปลูกข้าวอินทรีย์หรือข้าวดอยได้  ซึ่งกลุ่มตัวอย่างอาศัยอยู่ร่วมกับคู่สมรส และเป็นผู้ที่ไม่ได้เรียนหนังสือ มีประสบการณืการปลูกข้าวอินทรีย์หรือข้าวดอยตั้งแต่  11 ปีขึ้นไปมีรายได้ต่ำกว่าหรือเท่ากับ 10,000 บาท ผลการสร้างรูปแบบการมีส่วนร่วมของผู้สูงอายุในการผลิตข้าวอินทรีย์ พบว่า ผู้สูงอายุที่ทำการปลูกข้าวอินทรีย์หรือข้าวดอยส่วนใหญ่อาศัยประสบการณ์ในการปลูก โดยใช้วิธีธรรมชาติ ปลอดภัยจากสารเคมีทุกชนิด และยังมีความเชื่อในเรื่องพิธีกรรมเข้ามาเกี่ยวข้องกับกระบวนการเพาะปลูก เช่นมีการเรียกขวัญข้าว เพื่อให้ต้นข้าวเจริญงอกงาม ไม่มีแมลงรบกวน  รวมถึงการใช้ภูมิปัญญาท้องถิ่นจากรุ่นสู่รุ่นมาพัฒนาระบบการปลูกข้าวอินทรีย์หรือข้าวดอย

               ผลการส่งเสริมอาชีพของผู้สูงอายุในการผลิตข้าวอินทรีย์หรือการแปรรูปก็ได้ให้องค์ความรู้การแปรรูปข้าวอินทรีย์ให้กับผู้สูงอายุบ้านห้วยปูลิง อำเภอเมือง จังหวัดแม่ฮ่องสอน ร่วมกับวิสาหกิจชุมชนบ้านผาบ่อง ในการแปรรูปข้าวอินทรีย์ทำเป็นขนมขบเคี้ยวชื่อ “ข้าวพองต่อ” ซึ่งผู้วิจัยให้วิสาหกิจชุมชนบ้านผาบ่อง จังหวัดแม่ฮ่องสอนเป็นตัวช่วยในการขับเคลื่อนการแปรรูปข้าวอินทรีย์สำหรับผู้สูงอายุ เพื่อเป็นการสร้างรายได้ให้กับผู้สูงอายุอีกหนึ่งทางเลือก ทั้งยังได้ส่งเสริมการออกแบบบรรจุภัณฑ์ให้กลุ่มผู้สูงอายุด้วย

Abstract

The research aims to a study of the participation model of the elderly in the production of organic rice for household consumption and to promote the occupation of the elderly in organic rice production or processing. The research used a blended study method. During the qualitative research, data from interviews were collected.  in-depth group discussion and related documents. Data analysis uses content analysis. while the quantitative research used a questionnaire sample of the elderly in Ban Huai Pu Ling. Huai Pu Ling Subdistrict, Mueang District, Mae Hong Son Province and Ban Huai Hia, Pang Mapha Sub-district, Mae Hong Son Province. 388 cases The data were analyzed using descriptive statistical methods. It was found that most of the demographic characteristics of the elderly sample is People aged 60-64 years and above who still have the strength and ability to grow organic rice or Khao Doi in which the sample group lives with their spouse and is an uneducated person. They have experience in growing organic rice or Khao Doi for 11 years or more, earning less than or equal to 10,000 baht. Most of the organic rice or Khao Doi. depends on experience in cultivation. using natural methods Safe from all chemicals There is also a belief in rituals involved in the cultivation process. For example, there is a call for rice for the rice plant to flourish no insect infestation Including the use of local wisdom from generation to generation to develop an organic rice cultivation system or Khao Doi.

               The result of creation, promotion of the occupation of the elderly in organic rice production or processing, has given the knowledge of organic rice processing to the elderly at Ban Huai Pu Ling. mueang district Mae Hong Son Province with Ban Pha Bong Community Enterprise In the processing of organic rice into a snack called “ Khao Phong Tor ” which the researcher gave Ban Pha Bong Community Enterprise Mae Hong Son Province is a driving force in organic rice processing for the elderly. In order to generate income for the elderly is another option. It also promotes packaging design for the elderly as well.
